Onion "Pizza" from July 6th Picnic
The dow:
This is the special receipe from my mother. All ingredients need to be at room temperature (so you need to take them out ahead of time)
250 gr of cake flour
175 gr of butter (salted for quiche or pizza)
1 jumbo egg
Mix the 3 ingredients until well blended into a dow that makes a ball.
Roll thin on parchment paper, this amount of dow can make 2 pies/quiches/pizzas if rolled thin.
Place in pan, fold extra length inside to thicken the crust, poke holes throughout the bottom with a fork.
The filling
2 large vidallia onions minced
1 can of sun dried tomatoes in olive oil
5 branches of thyme
10 chopped calamatta olives
1 box of Goat Cheese crumbled with Mediterranean herbs
3 thin slices of prosciuto ham
2 tablespoons of sugar
water
Pour the oil from the sun dried tomatoes can into a pan, add the minced oignons, let seer at mid temperature for 10 to 15 minutes until the onions become golden brown.
Add the tomatoes, the olives, the thyme leaves & the sugar, cover with water & let seam until the water evaporates.
Drain if too much grease.
In the meantime, spread half the box of crumbled cheese at the bottom of the pie & cover with the proscuito cut in small squares (it will be easier to cut slices).
Pour the carmelized onions on top.
Cook for 40 minutes at 400 degrees.
Enjoy warm or cold with a side salad.
